Desert Olives

Foraging

Inspired by this loved book, we have been doing some foraging lately, both real and imaginary.  While we are quite far from the salty sea air and wild beauty of Maine, where Sal picks blueberries and forages for clams, we do have some things we can collect in nature here.  A couple years ago, I came across some local women picking hubeza, also known as mallow I think, which grows wild here in late winter/ early spring. The women shared some of their hubeza with me and many friends have told me how to cook it (chopped with olive oil, onion, lemon, and spices).  So Caleb and his dear Bedouin friend (they go way back) set off with a bucket on a sunny winter day to pick hubeza…
